400 ml de caldo vegetal o caldo claro de pescado&lt;br /&gt;
1 chalota&lt;br /&gt;
16 esp&amp;#225;rragos verdes&lt;br /&gt;
16 gambas limpias&lt;br /&gt;
40 g de mantequilla&lt;br /&gt;
1 cucharada de perejil picado&lt;br /&gt;
50 ml de vino blanco&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Preparaci&amp;#243;n:&lt;/strong&gt;&lt;/p&gt;

&lt;p&gt;Sofr&amp;#237;e en un cazo la chalota con el aceite y la mitad de la mantequilla. Tuesta el arroz con la chalota durante unos segundos y agrega el vino blanco.&lt;/p&gt;

&lt;p&gt;Hierve los esp&amp;#225;rragos limpios y reserva. Espera a que el vino se evapore y une entonces las gambas peladas y los esp&amp;#225;rragos troceados. A&amp;#241;ade el caldo corto y despu&amp;#233;s el caldo vegetal, que se incorpora poco a poco para una cocci&amp;#243;n de 15-18 minutos.&lt;/p&gt;
